Tigernut Banana Bread Bars

Ingredients:
- 2 very ripe bananas + 1/2 of one for layering
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 cup coconut oil melted
- 1/2 cup tigernut flour
- 1/4 cup honey
- 2 tsp cinnamon
- 1/2 cup dairy free chocolate chips (I use enjoy life)
Directions:
- Preheat oven to 350F
- Blend bananas, vanilla, and coconut flour until smooth
- Add in tigernut flour, baking soda, and sea salt and blend until batter is smooth
- Fold in chocolate chips
- Oil a loaf pan and transfer half of the batter into the bottom of the pan
- On top of the first layer, add chunks of banana, drizzle 1/4 cup honey, and sprinkle cinnamon, and then top with the rest of the batter
- Bake for 45 min or until golden brown on the edges
- Let cool before transferring out of the pan
