Sweet Potato Chocolate Chip Cookies

Allergens: nuts, dairy (omit ghee and use coconut oil for dairy free)
Ingredients
- 1/2 cup coconut flour
- 3/4 cup cooked sweet potato
- 1/2 cup coconut sugar
- 1/2 cup cocoa powder
- 3 Tablespoon of ghee (for lactose free). You can use butter or coconut oil
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup cashew milk (or regular)
- 1 cup dairy free dark chocolate chips (or regular)
Directions
- Preheat oven to 350F and line a baking sheet with parchment paper
- Mix wet ingredients in a bowl
- Mix dry ingredients in another bowl
- Combine ingredients together
- Using a spoon, form balls of batter into your hands and shape into cookies
- Place cookies on parchment paper and bake for 20 minutes
- Enjoy!
