Sunbutter Cups

These sunbutter and jelly cups made with my CBD oil, are nut free with the option to use peanut butter if you’d like. No hydrogenated oils or refined sugar like your standard peanut butter cups, without sacrificing taste
Main Ingredients:
- 1.5 cups sunflower seed butter
- 2 tbsp maple syrup
- 3 tbsp CBD oil (or butter or coconut oil)
- 1/4 tsp sea salt
- 1/2 tsp vanilla extract or fresh vanilla bean
For outer layer:
- 1 cup chocolate chips
For the filling:
- 1/2 cup raisins
- 1/2 cup pitted dates
- 1 teaspoon just love beets powder (optional, makes it more pink!)
Directions:
- Soak dates and raisins in warm water. Spray muffin tins with oil. Mix all main ingredients (soften butter or oil before mixing).
- Drain filling ingredients and place in a food processor with beet powder, pulsing until reaching a jelly like consistently.
- Scoop a layer of the seed butter mix in each muffin tin, then spoon a doll up of filling mix in the middle of the seed butter mix. Cover with another layer of seed butter.
- Repeat for each muffin cup. Place in the freezer for about an hour.
- Melt chocolate and roll each sunbutter cup in the chocolate, place on parchment paper and keep in the freezer.
