Stewed Apples (gut friendly)

Ingredients:
-
4 medium apples (preferably organic, skin on if tolerated)
-
½–1 tsp ground cinnamon (or 1 cinnamon stick)
- Juice from 1/2 lemon
-
½ tsp freshly grated ginger or ¼ tsp ground ginger (totally optional I love ginger but not everyone does!)
-
2–3 tbsp water (just enough to prevent sticking)
-
1 tbsp raw coconut oil
-
Optional: a few raisins for natural sweetness
Instructions:
-
Chop the apples into small chunks — leave the skin on if your gut tolerates it for extra fiber and pectin.
-
Add to a small saucepan with the water, cinnamon, coconut oil, and ginger.
-
Cover and simmer on low heat for about 10–15 minutes, stirring occasionally, until the apples are soft and slightly broken down. Add a splash more water if needed.
-
Remove from heat.
-
Serve warm — on top of oats, yogurt, chia pudding, or just on its own as a soothing, gut-healing snack.
