Pumpkin Protein Bites with Maple Coconut Glaze (no bake!)

Ingredients
Bites:
-
1 cup protein powder (I use the So Lean So Clean brand)
-
1 cup almond flour
-
1/2 cup tapioca flour or potato starch
-
1/3 cup coconut sugar (or use Allulose for sugar-free)
-
1/3 cup melted coconut oil
-
1/3 cup pumpkin purée
-
2 tablespoons raw honey
-
1 tablespoon water
Maple Coconut Glaze:
-
3 tablespoons maple syrup
-
1/3 cup coconut butter
Directions
-
In a large mixing bowl, combine the protein powder, almond flour, tapioca flour, and coconut sugar.
-
Stir in the melted coconut oil, pumpkin purée, honey, and water. Mix until a thick dough forms.
-
Roll the dough into bite-sized balls and place them on a parchment-lined tray.
-
In a small saucepan over low heat, melt together the maple syrup and coconut butter until smooth.
-
Drizzle the glaze over each protein bite.
-
Place in the refrigerator for 20–30 minutes or until the glaze sets.
-
Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
