Paleo Banana Bread


Ingredients:
- 1/2 cup almond milk
- 1/2 cup almond butter
- 2 ripe bananas, mashed
- 1 cup Birch Benders Paleo Banana Pancake mix
If not using Birch Benders mix:
- 1/2 cup almond milk
- 1/2 cup almond butter
- 1/4 cup coconut oil, melted
- 2 ripe bananas, mashed
- 1.5 cups blanched almond flour
- 2 tbsp coconut flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 2 tsp vanilla extract
- 1/4 tsp sea salt
**Optional:
1 cup enjoy life dairy free chocolate chips
1/2 cup chopped walnuts
For caramelized banana top:
- Slice 1 banana length wise
- Heat 1/2 tbsp of coconut oil and 1 tsp cinnamon in a large pan on the stovetop and lightly fry the banana until soft.
- Place banana carefully with a spatula on top of banana bread before going in the oven.
Directions:
- Preheat oven to 350F and oil a medium loaf pan with coconut oil.
- Whisk together all dry ingredients and set aside. In a large bowl, mash the bananas and then whisk in the other wet ingredients.
- Slowly stir the dry mixture into the wet until no visible flour remains.
- Transfer the batter into the load pan and bake in the preheated oven for 30 minutes for the birch benders mix and 40-50 minutes for the recipe without the mix. To test doneness, stick a toothpick in the center of the loaf and it should come out clean when it’s done!
