Oat Flour Banana Bread

Allergens: egg
Ingredients:
- 1.5 overripe bananas
- 1 large egg
- 3 Tablespoons oil
- 1 cup oat flour (Use gluten free oats to make GF recipe)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 cup tapioca or cornstarch
- 1/2 cup chocolate chips
- 2/3 cup brown sugar (can try using less to cute the sugar)
Directions:
- Preheat oven to 350 F and lightly grease an oven-safe pan
- How to make oat flour: add the oats (instant or rolled oats, plain) to a blender or food processor and blend until it is a flour-like consistency
- Mix the dry ingredients in a bowl (oat flour, cornstarch, brown sugar, baking powder, baking soda, salt, cinnamon)
- Mix the wet ingredients in a separate bowl (bananas, egg, oil)(omit chocolate chips)
- Combine dry and wet ingredients and stir in chocolate chips
- Add the mix to the pan
- Bake for 45 min or until a toothpick comes out clean
