Gut Friendly Marshmallows (pregnancy friendly too!)

Ingredients:
-
4 tablespoons gelatin
-
½ cup water (for blooming)
-
1 cup maple syrup (can use honey too!)
-
½ cup water (to combine with syrup)
-
1 teaspoon vanilla extract
Instructions:
-
Bloom the gelatin: In a large bowl or the bowl of a stand mixer, sprinkle 3 tablespoons of gelatin over ½ cup of water. Let it sit for about 5 minutes to soften.
-
Heat the syrup: In a saucepan, combine 1 cup of maple syrup and ½ cup of water. Bring to a boil, then reduce heat and simmer for about 9 minutes.
-
Combine: Slowly pour the hot syrup mixture into the bloomed gelatin while mixing.
-
Beat: Using a stand mixer or hand mixer, beat on high for 8–10 minutes until the mixture becomes light and fluffy.
-
Add flavor: Mix in 1 teaspoon of vanilla extract.
-
Set: Pour the mixture into a dish lined with parchment paper and let it set overnight.
-
Once set, cut into squares and enjoy a sweet, gut-supportive treat! Stays fresh for 10 days on the counter or a few months in the fridge.
