Gluten free pasta salad

Ingredients
-
2 boxes Jovial gluten-free pasta (I’ve also tried it with chickpea pasta and no one even knew), cooked and cooled
-
3 bell peppers, diced (any colors)

1 cucumber, diced
-
1/3 cup salami, sliced
-
1/2–3/4 cup feta cheese, crumbled – I’ve done this dairy free too with this brand it also, no one knew
-
1/2-2/3 cup store bought Italian dressing
-
Optional: chopped parsley or basil, olives, or red onion for extra flavor
Instructions:
-
Cook pasta according to package directions. Drain and rinse with cold water. Let cool completely.
-
In a large mixing bowl, combine the cooled pasta, bell peppers, cucumber, salami, and feta.
-
Pour dressing over the salad and toss until everything is well-coated.
-
Taste and season with salt and pepper as needed.
-
Chill for at least 30 minutes before serving to let the flavors come together.
