Easy High Protein Sweet Potato Muffins

Allergens: egg, nuts
Ingredients
- 2/3 cup egg whites
- 1 egg
- 1/2 of a cooked sweet potato
- 1/2 banana
- 1 tbsp coconut flour
- Lots of cinnamon
Directions
- Preheat oven to 375
- Line muffin tray with tins sprayed with oil
- Mix all ingredients in a blender or food processor and LET SIT for a few min so the coconut flour can absorb the moisture ***
- Bake for about 30-40 min; I let mine go even longer until the tops get golden brown
