Date Bark (Similar to viral recipe)

Ingredients

    • 2½ cups soft pitted dates (about 40 dates), tightly packed

    • 1/3–1/2 cup peanut butter

    • 3-4 tbsp date syrup (optional but I like this addition to mimic the caramel center of a snickers)

    • 1/2 cup Spanish salted peanuts with skin

    • 3/4 cup dark chocolate ( I used 80% cocoa for less sugar and more polyphenols!)

    • 1 tsp coconut oil

Instructions

  1. Prepare the date base. Line a baking sheet or small tray with parchment paper. Arrange the dates tightly next to each other in a rectangle, slightly overlapping. Flatten using a rolling pin or the bottom of a glass until they form an even layer. If dates are not very soft, soak them in warm water for 3–5 minutes, drain well, then flatten.
  2. Add the peanut butter layer. Spread the peanut butter evenly over the flattened dates. Drizzle with date syrup for added sweetness and a caramel-like flavor.
  3. Add peanuts. Sprinkle the salted peanuts evenly over the peanut butter layer, gently pressing them in.
  4. Melt the chocolate
Melt the dark chocolate with coconut oil using a double boiler or microwave in 20-second intervals, stirring between each until smooth.
  5. Finish and set
Pour the melted chocolate over the peanut layer and spread evenly. Freeze for 1–2 hours, or until fully set.
  6. Serve. Break into pieces and enjoy chilled.
