Butternut Squash Waffles

(Makes about 7 medium size waffles)
Allergens: egg, nut (can make a nut free version; omit the shredded coconut and use brown sugar)
Ingredients:
- 1/2 cup canned butternut squash
- 1/2 cup brown rice flour
- 1/2 cup egg whites
- 1 whole egg
- 1/4 tsp baking powder
- 2 tsp cinnamon
- 1 tbsp coconut sugar
- 3 tbsp shredded coconut
- pinch of salt
Directions:
- Heat waffle iron to highest setting
- Combine all ingredients in a blender until combined
- Spoon into the waffle iron, wait for timer to go off
- Top with anything you desire !
