Banana Coconut Flour Pancakes

Ingredients

  • 2 eggs
  • 1 overripe banana
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Directions

  1. Mix eggs and mashed banana in a bowl
  2. Mix coconut flour, baking powder, and cinnamon in a separate bowl
  3. Combine both mixtures together and let it sit for 5 minutes (important to let the flour absorb the moisture)
  4. Oil a pan very well (I use coconut oil so it doesn’t burn) and drop batter onto the pan with a spoon, smoothing the batter into a circle with the back of the spoon
  5. Cook on medium for about 2-3 minutes on each side

When you say overripe, how overripe should the banana be? And what’s the purpose of overripe fruit?

It’s personal preference but ideally having brown spots for the purpose of it being sweeter to naturally add sweetness to the recipe!
