Banana Coconut Flour Pancakes

Ingredients
- 2 eggs
- 1 overripe banana
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
Directions
- Mix eggs and mashed banana in a bowl
- Mix coconut flour, baking powder, and cinnamon in a separate bowl
- Combine both mixtures together and let it sit for 5 minutes (important to let the flour absorb the moisture)
- Oil a pan very well (I use coconut oil so it doesn’t burn) and drop batter onto the pan with a spoon, smoothing the batter into a circle with the back of the spoon
- Cook on medium for about 2-3 minutes on each side
