Banana Chocolate Protein Doughnuts


Allergens: nuts, egg
Ingredients
- 2 large eggs
- 2 small ripe bananas mashed
- 2 tbsp coconut oil ( or vegetable oil)
- 1/3 cup coconut flour
- 2.5 tbsp coconut sugar ( or brown sugar)
- 1/4 cup cocoa powder
- 1 scoop vanilla vega protein powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/8 tsp salt
For the glaze
- 1.5 cups dairy free dark chocolate chips
- 1 tsp oil
Directions
- Preheat oven to 350F
- Spray donut pan with non-stick spray
- Whisk sugar, egg, vanilla, oil and banana together in a bowl
- In a seperate bowl mix together dry ingredients
- Add dry ingredients to the bowl with the wet ingredients until combined
- Spoon batter into the corner of a large plastic ziplock bag ( you can put batter in the pan without this step, but it’s produces a more even baked product)
- Cut the corner of the bag and squeeze batter evenly into donut pan
- Bake for 10 min
- Melt chocolate chips and oil in a pot over the stove or in the microwave
- Use a knife to spread melted chocolate onto the donuts once they have cooled for a few min
- Top with coconut flakes, salted crushed nuts, sprinkles, Grahm cracker crumbs, or just eat them plain!
